7-Layer Bachelor Bars

A couple of years ago, before I had my son and couldn’t leave the house on weeknights, I met up with some of my best girlfriends to watch The Bachelor or Bachelorette every Monday night. Honestly, I’d never watched it before my friend invited me over, but it was one of the few chances to hang out with my closest girlfriends, so I figured I’d make the best of it.

And five years later, I still watch Bachelor every single Monday night it’s on. Sometimes on my own after playing volleyball night, sometimes with my sister on the phone discussing every move, and sometimes with my husband laughing along with me.





But my favorite way to watch the Bachelor is for sure with those same girlfriends I started watching with a couple of years ago. One of our favorite things to do is to watch the train wrecks (if you watch, you know what I’m talking about) unfold right before our very eyes. I wouldn’t for a second go on the show looking for love myself, but it’s for sure entertaining watching other people try.

With just two shows left in this season’s Bachelor, I honestly have no idea what Ben is going to do. Or how he’s going to get out of saying I love you to two girls when in past seasons, the Bachelor hasn’t really said I love you before the proposal (or not) at the end. The girls tell all episode this coming week will for sure be a good one to say the least. Maybe one of the best yet.

In honor of the girls tell all episode and the final rose ceremony coming up in two weeks, I thought it would be fun to make a treat inspired by all of my favorite parts of the Bachelor. Comfort food is the best kind for watching guilty pleasures and these 7-layer Bachelor bars are comfort food at its best. I had a lot of fun coming up with this recipe, enlisting the help of my Facebook fans, and my family before coming up with the perfect combination. Let’s talk about those layers.

  1. Blondies – has there ever been a Bachelor without a couple, or a hundred, blond moments?
  2. Shredded coconut – so many tropical destinations that I want to visit!
  3. Chopped dates – do I really need to explain this one?
  4. Chocolate chips – romance = chocolate
  5. Butterscotch chips – When I asked my Facebook fans, many of them mentioned large consumptions of alcohol. I don’t drink alcohol or use it in my recipes, so butter “scotch” was the closest I could get. And they’re great with the chocolate.
  6. Marshmallow fluff – If you’ve ever listened to a conversation on The Bachelor, you’ll get this one. Lots and lots of fluff. And editing.
  7. Chopped walnuts – Because my favorite parts of the show are typically the girls who are a little nutty, or when everyone gets all dramatic and goes nuts

These ones start with a blondie base (I just used this recipe minus the chocolate chips). Add on the fruit and chips then top with sweetened condensed milk. Add a final layer of marshmallow fluff then sprinkle with chopped nuts for a nice crunchy finish. Then bake.

Make sure when you bake to leave them in long enough for the blondies on the bottom to bake. And just as a side note, the Bachelor bars are meant to be messy and eaten with a fork. Or a heart shaped spoon if you prefer. They’re a perfectly delicious hot mess. And if that doesn’t say The Bachelor, I don’t know what does.

7-Layer Bachelor Bars

Delicious 7-layer bars filled with gooey chocolate butterscotch, and marshmallow then topped with crunchy nuts! Prep: 15 minutes Cook: 45 minutes Total: 1 hour Serves9

Ingredients

For the blondies:

  • 1 cup packed brown sugar
  • 1/4 cup butter , melted
  • 1 egg , lightly beaten
  • 1/2 tsp vanilla extract
  • 3/4 cup flour
  • 1/4 tsp baking powder
  • 1/4 tsp kosher salt

For the Bachelor bars:

  • PAM Cooking Spray
  • Blondie batter (using recipe above)
  • 1 cup shredded , sweetened coconut
  • 1/2 cup chopped dates
  • 1 cup semi-sweet chocolate chips
  • 1 cup butterscotch chips
  • 1 cup sweetened condensed milk
  • 1 cup marshmallow fluff
  • 1 cup chopped walnuts

Instructions

For the Blondie batter:

  • Mix brown sugar, butter, eggs, and vanilla in a large bowl.
  • Add in dry ingredients and mix until well combined.

For the Bachelor Bars:

  • Preheat oven to 350 degrees.
  • Spray the bottom of a 9x9 square baking dish all over with PAM Cooking Spray.
  • Pour blondie batter on bottom of baking dish, spreading evenly over the bottom with a spoon if necessary.
  • Top blondie batter with shredded coconut and chopped dates.
  • Pour chocolate chips and butterscotch chips on top of the fruit.
  • Pour sweetened condensed milk over all of the layers in the dish so far.
  • Top everything with marshmallow fluff, spreading over the other layers as much as possible with a spoon.
  • Top the marshmallow fluff with chopped walnuts.
  • Bake for 35-40 minutes or until blondie batter seems cooked through completely. Remove from oven and let cool for 10-15 minutes to allow bars to set.
  • Cut into 9 even pieces and enjoy warm, at room temp, or chilled.
