A Life-Changing Recipe

If you asked me ten years ago if I liked cauliflower, I would’ve responded that I liked raw cauliflower dipped in ranch dressing, almost as much as I liked raw broccoli dipped in ranch dressing. I don’t actually even remember eating cooked cauliflower, ever.

Then my husband introduced me to this cauliflower puree and all of my thoughts about cauliflower went out the window with one single bite. I had no idea that cauliflower could be so good.





That was about seven years ago and now many of the recipes that show up on my favorite Whole 30 meal plan are cauliflower recipes. And one of my favorite tapas ever – this cauliflower, olive, and date dish, stars cauliflower. I’ve probably eaten more cauliflower rice in the past three years than regular rice. It’s become one of my favorite healthy substitutes and it all started with this side dish.

What Makes This Better than Mashed Cauliflower?

Nothing really, it’s just different.



While mashed cauliflower can be delicious when done right, it typically just makes me want actual mashed potatoes. This puree doesn’t do that at all – it stands all on its own. It’s not a healthier substitute for something else – it’s a delicious healthy side dish that even your kids will love. Maybe just don’t mention that it’s cauliflower until after they’re done eating it if they’re picking like my son!

Unlike mashed cauliflower, this puree is silky smooth because you puree all of the little kinks and bumps of the cauliflower out of it. If you’re looking for something more lumpy by all means makes mashed cauliflower. But if you want something smooth, go with this.

How to Make This Cauliflower Puree

The best part about this cauliflower puree is that it’s simple well and no fail. Unlike mashed cauliflower where you could get it too creamy or too lumpy or just not good, this cauliflower puree blends everything up until it’s smooth. Just like in this mint green smoothie, all the flavors are mixed all together so they’re going to be well combined one way or another.

The only way to really screw it up is to add too much bone broth so it turns liquidy instead of creamy, but that’s pretty easy to avoid if you follow the recipe!

Another great thing about this recipe is that there are only a few ingredients – cauliflower, ghee, salt, coconut cream, and Vital Proteins Chicken Bone Broth Collagen . You can technically use regular chicken bone broth but why? The Vital Proteins bone broth collagen not only tastes fantastic and doesn’t have to be refrigerated (it’s a mix-in powder) but it also adds a healthy dose of protein to this cauliflower puree – protein that’s good for your nails, hair, joints, and really just overall health. We always have some on our shelf for anytime we want to add bone broth to a recipe!

The recipe is as easy as 1, 2, 3. Cut your cauliflower, steam it in the chicken bone broth, then puree with all of the other ingredients until silky smooth. The steaming typically takes 10-15 minutes but even with that, you could easily make this cauliflower puree in about 20 minutes. It’s the perfect side to go with this paleo almond chicken and fresh green beans or this strawberry spinach salad .

What to Serve With This Cauliflower Puree

I mentioned it already but my favorite thing to eat with this keto cauliflower puree is my husband’s almond chicken recipe . The crunch of the almonds with the smooth texture of the cauliflower is literally one of my favorite combinations of food ever. It’s right up there with pizza loaf , which is totally not Whole 30 (or keto) friendly!

But if you’ve already tried the almond chicken and want something else, these would be delicious with the puree as well!

I didn’t have time to make almond chicken (we’re headed to Europe tomorrow morning) so I took these photos with totally not Whole 30 or keto friendly Chick Fil-A chicken tenders. Whatever! So that’s an option too.

Cauliflower Puree Recipe

An easy cauliflower puree recipe that's even better than mashed cauliflower! A whole 30 and keto friendly recipe that's smooth, delicious, and filled with healthy ingredients!
Prep: 5 minutes Cook: 15 minutes Total: 20 minutes Serves4

Ingredients

Instructions

  • Heat cup of water until hot.
  • Mix bone broth collagen into water until well combined.
  • Put chopped cauliflower in a large pot with cup of the bone broth liquid on the stove over medium-high heat until boiling.
  • Once bone broth is boiling, reduce heat to low-medium and let simmer until the cauliflower is tender, 10-15 minutes.
  • Pour cauliflower and bone broth into a high-powered blender. Add coconut cream, salt, and ghee to blender. Blend until silky smooth, 3-5 minutes.
  • Remove from blender and serve with additional ghee (optional).

Tips & Notes:

If for some reason the cauliflower puree won't blend, you can add a bit more bone broth to the mixture. If you like it thicker, simply use less bone broth.
