When my husband and I were dating we didn’t have a ton of money so most of the time we ended up back in one of our apartments (mainly mine) just hanging out, watching TV, or cooking together. And often times we combined two of those and watched cooking shows together and then made dinner together inspired by things we saw on the cooking shows.





Fast forward a couple of years and we still love to watch cooking shows on TV. Now it’s not just the typical cooking shows but more cooking competition shows like Hell’s Kitchen, Top Chef, and The Great Food Truck Race.

One of the things I remember most from our many nights watching Hell’s Kitchen was how they almost always had to cook the same meals for dinner – scallops, risotto, and beef wellington, apparently three pretty hard dishes to make. I’ve never actually tried making a beef wellington myself, but I love the idea of meat tucked into a flaky puff pastry crust and thought it would be fun to try.



Instead of making beef wellington, I decided to turn the popular dinner recipe into a breakfast recipe. Flaky puff pastry filled with eggs, Jones Dairy Farm fully cooked breakfast chicken sausage patties (that you can find in the freezer section at your local grocery store!), and cheese. Dip it in maple syrup for a nice sweet touch. It’s perfect for breakfast, brunch, or even better for brinner – breakfast for dinner! Make it for dinner then eat leftovers for breakfast or brunch the next day.
