These homemade lemon strawberry popsicles are sweet, refreshing, and absolutely delicious. With a bit of tang and a lot of sweet, these healthy popsicles are ones that both kids and adults craving a sweet treat will enjoy! The perfect fruit popsicles for a hot summer day.

I’m kind of a popsicle addict if you hadn’t noticed already by my funfetti popsicles or these blue lemonade popsicles . There’s just something about enjoying a freezing cold popsicle on a hot summer day that is like the epitome of refreshing. Forget a glass of water or even a citrus mocktail , I’ll take a popsicle any day.

I’ve passed my love of popsicles onto my son, which so far hasn’t been a good thing because all he wants are those sugar and artificial ones that come in bright colors and have jokes on the sticks.

You can’t eat the joke on the stick kind of popsicles all day every day.



These lemon strawberry popsicles on the other hand, you can. You still probably shouldn’t but you could. At least more than you could eat the full sugar, artificial all the thing ones.

Easy Lemon Strawberry Popsicles: Ingredients

There are just a few ingredients in these strawberry popsicles. I’m going to tell you how I made them, sweet enough that my kiddo still enjoyed them, and then give you some alternative options to make them just a bit healthier.

First thing first, gather all of your ingredients. There are just a few – fruit, honey, Vital Proteins Strawberry Lemon Beauty Collagen , and a liquid of your choice. I used some lemon-lime soda but you could totally use sparkling water, water, or even lemonade. Read the notes at the bottom of this post for my recommendations on the liquids!

And p.s., don’t think about skipping the Strawberry Lemon Beauty Collagen . They add the flavor to these popsicles so if you make them without and tell me these didn’t turn out, that’s why. And all the different flavors of beauty collagen are good for you – they help with skin hydration, skin elasticity, and help maintain firm skin. And if you’re doing Whole 30 , they’re even Whole 30 approved.

How to Make Lemon Strawberry Popsicles

Unlike some popsicles where you literally just pour a liquid into popsicle molds, these are a bit more complicated meaning there’s really just one more step.

Instead of just pouring everything straight into the mold, you need to blend it all together first. We’re dealing with fresh strawberries, powdered beauty collagen, and honey – they need to be blended together or the popsicles are going to be a clumpy gross mess.

So first things first place the strawberries, honey, lemon juice, and beauty collagen into the blender and blend into a puree. You want to add the beauty collagen in with the strawberry puree because the collagen reacts (aka fizzes up) when you add it to carbonation straight.

Then add in the liquid of your choice into the blender and blend until the mixture is smooth and pourable. This will keep you from having a fizzy mess all over your hands!

Pour the mixture into your popsicle mold, freeze for at least a few hours, and enjoy your healthy popsicles! Make sure they’re totally frozen before taking them out of the molds or the sticks will come out of the popsicles and all bets are off.

Side note – if the popsicles are tough to get out of the molds, run the bottoms under a bit of hot water then wiggle wiggle wiggle until the strawberry popsicles come loose.

What Liquid to Use in These Fruit Popsicles

As I mentioned above, these popsicles work with a variety of different liquids depending on if you want super healthy popsicles, not quite as healthy popsicles. We used Sprite for these (only a 1/2 cup for all six popsicles) and another good alternative for not as healthy strawberry popsicles would be some lemonade.

If you want to go the uber healthy route, these can also totally be made with coconut water, water, or sparkling water like Le Croix (the berry or lemon flavor would be great). They won’t be quite as sweet but still taste good.

Lemon Strawberry Popsicles

  • Mix beauty collagen + Sprite together until collagen is dissolved.
  • Combine strawberries, lemon juice, and honey together in blender. Blend until well combined.
  • Add sprite + collagen mixture to strawberry puree and blend until smooth.
  • Pour into popsicle molds and freeze for at least six hours, preferably overnight.

Tips & Notes:

For an even healthier alternative, substitute the Sprite with water, sparkling water, or coconut water. It'll change the flavor to be a bit less sweet but will reduce the sugar content.
